We conventionally aged straight rye mashbill for three years and finished it in an amontillado sherry cask from one of the most prestigious bodegas of Montilla-Moriles in Spain.
As with all of Coppersea’s “Heritage Methods Distilled”, we mash the Single Barrel Rye in open-top fermenters for additional local terroir, twice-distill in True Fire Copper, direct-fired simple alembic stills, and barrel age our spirits at the ultra-low proof of 105. An Empire Rye.
