Low-Proof Barreling

Our innovative barreling program looks “back to the future” in our low 101-proof barreling. While this used to be standard practice, the economics of raising barrel entry proof to 125 proved irresistible, leading to whiskies in new charred oak requiring longer in barrel to mellow, since many water-soluble sugars were now being left behind.

Our 101-proof barreling extracts equal parts alcohol- and water-soluble elements from the barrel.

We also worked with US Barrel to develop the first cooperage in New York since prohibition, enabling us to deliver on Excelsior Bourbon’s provenance of being truly 100% New York: Distilled in New York from exclusively Hudson Valley grains and aged in barrels made in NY from New York oak.
